Florentine Cookie Cups

1 cup plus 4 TB of sugar
8oz. plus 2 TB of butter
1 ½ cup AP plus 4 TB
½ cup of light Corn Syrup
1 cup of Sliced Almonds Blanched

Mix butter and sugar in mixer with whisk attachment. Add flour and mix, add corn syrup. Fold in Almonds and roll dough into log and wrap in wax paper. Cut round ¼ inch thick and Bake on a parchment or silpat lined cookie sheet at 350 till golden brown. Be careful to allow a lot of room for the cookie to spread. Once out of oven let cookie cool for a minute till you can pick it cup and drape it over a ramekin or coffee cup to form a cup. Once cool fill Cookie with scoop of vanilla ice cream and top with favorite Sassy Sauce. Store remaining log of cookie dough in freezer till ready to use again.
